The 56th Chicken Curry with Cauliflower and Broccoli

This month's power food:

Cauliflower

This is the season where people come together.
Create a special atmosphere with this classic curry.

Ingredients (5 servings)

Cauliflower: (Hamamatsu Power Food) 100 g
Broccoli: (Hamamatsu Power Food) 100 g
Onions: (Hamamatsu Power Food) 2
Garlic: (Hamamatsu Power Food) 50 g
Ginger: (Hamamatsu Power Food) 50 g
Chicken: 500 g
Tomatoes: 200 g
Garam Masala: 2 teaspoons
Water: 100 ml
Salad oil: 50 g
Spices
Cloves 1 teaspoon
Green cardamom 1 teaspoon
Black cardamom 1 teaspoon
Paprika 2 teaspoons
Cinnamon 2 teaspoons
Fenugreek 2 teaspoons
Cumin 3 teaspoons
Coriander 3 teaspoons
Bay (laurel) leaves: 5 leaves

Cooking Instructions (Cooking time: About 30 minutes)

  1. Chop the garlic and finely slice the ginger.
  2. Dice the onions, cut the tomatoes into wedges, and cut the chicken into bite-sized chunks.
  3. Boil the cauliflower and broccoli until soft.
  4. Heat the salad oil, add items from (1), and sauté at medium heat for 2 minutes.
  5. Add the onions from (2) to the items in (4) and sauté at medium heat for 10 minutes.

    NOTE Cook the onions thoroughly until brown for a more complex and delicious flavor.

  6. Add all the spices except the fenugreek to (5) and sauté for 10 minutes at medium heat, ensuring the ingredients do not burn.

    Note: Spices are prone to scattering, so covering them with a lid is recommended.

  7. Add the chicken to (6) and sauté for 10 minutes.
  8. Add the tomatoes and water to (7). When it boils, turn down the heat to simmer for 5 minutes.
  9. Mix the garam masala into (8), cover, and simmer for 2 minutes.
  10. Lastly, place the cauliflower and broccoli on top to complete the dish.
